Turkey, Cranberry & Stuffing Burgers

With Homemade Garlic Herb Fries

"A perpetual holiday is a good working definition of hell."
George Bernard Shaw

While this may well be true for a plethora of reasons, it certainly doesn't hold true for the food. While cold weather or leaves changing colour might be the most common triggers of the 'turkey and stuffing' craving, they certainly aren't the only ones. Every once in a while it will rain and I'll get a serious hankering for some Thanksgiving fare. Not too long ago this feeling struck - unfortunately it is also officially summertime and B has already scrubbed the grills in preparation for BBQ season. As a happy compromise the turkey, cranberry, stuffing - or 'Thanksgiving Burger' - was born. Paired with savoury sweet and russet potato fries broiled with poultry blend herbs, and a rich roasted garlic mayo side, this is the perfect summer meal for when you just need some of that comfort food. I've been contemplating some variations on this instant household classic, but until I've toyed around a bit, here is the original. I made my own cranberry sauce from scratch but feel free to sub store bought for that part. Same goes for the patties and the stuffing. Play around. Have fun.

PS. This recipe is for two, but one box of stuffing and one batch of cranberry sauce will easily make more burgers than that. Adjust accordingly.

You will need...

2 Turkey burger patties (store bought or homemade)
1 box of Stovetop Turkey stuffing, cooked as per instructions
2 fresh Kaiser rolls
2 slices of Gouda or Swiss cheese
1/4 cup walnuts, chopped
Fresh Tomato Slices
Lettuce
Oil/Vegetable Spray

Cook the turkey patties on the BBQ. While they are grilling, add the chopped walnuts to the cooked stuffing and combine. After the stuffing has cooled sufficiently, work the mixture with your hands and form into slightly flattened patties - comparable in size and shape to the turkey patties of your choice.

In a large frying pan, heat the oil or vegetable cooking spray over medium-high heat. Place stuffing patties on the hot pan and cook for about two minutes per side, or until they develop a crisp, brown crust. Set aside.

Lightly butter the kaiser rolls and toast on the BBQ.

Spread a layer of roasted garlic mayo on both sides of the toasted bun. Spread a generous teaspoon of cranberry sauce over top of the mayo. Layer the turkey, stuffing, cheese, lettuce, and tomato respectively.

Serve hot with a side of homemade fries and extra garlic mayo for dipping.
